How To Make Manhattan Brunch

Step 1: Start the hash browns
Place the frying pan on a high heat and add two tablespoons of butter. Allow to melt and add the parboiled potatoes. Cook for 3 minutes then turn. Cook for a further 3 minutes and then using a wooden spoon, gently break the potatoes up.
Step 2: Complete the hash browns
Season with salt and pepper and cook for a minute. Add another tablespoon of butter and the slices of onion. Cook for a further 3 minutes until the potatoes have browned and the onions have softened. Add the spring onions and remove from heat.
Step 3: Serve and enjoy
Present the hash browns on a large serving plate and compliment with a fried egg, 2 rashers of bacon, a sausage, a glass of orange juice and a mug of steaming coffee. Add toast for heavier brunches and spread generously with butter or jam.
